Put the bread on to toast and bring a small pan of water to a bare simmer if poaching.
Mash the avocado with the lemon juice, salt and pepper, leaving it lumpy.
To poach: add the vinegar, stir the water into a slow swirl, slide in one egg at a time and cook for 3 minutes for a runny yolk, 4 for a jammy one. Lift out with a slotted spoon onto kitchen paper.
To fry: heat the oil over medium heat, crack in the eggs, cover the pan and cook 2 to 3 minutes until the whites are set and the yolks still soft.
Spread the avocado over the toast, sit an egg on each slice, and season the egg itself with a pinch of salt and the chilli flakes and herbs.
