Baked Eggs in Avocado

This is the keto breakfast that keeps appearing everywhere, and it works — as long as you widen the hollow first. A standard avocado cavity holds about half an egg.

Use large avocados and medium eggs, not the other way round.

    Heat the oven to 200°C. Halve the avocados and remove the stones.

    Scoop out about a tablespoon of flesh from each hollow so it will hold a whole egg. Keep the scooped flesh for toast.

    Sit the halves in a baking dish, wedged against each other or on crumpled foil so they cannot tip over.

    Crack one egg into each hollow — crack it into a cup first and slide the yolk in, then add as much white as fits. Season with salt and pepper.

    Bake for 13 to 16 minutes, until the whites are set and the yolks still soft. Add cheese for the last 3 minutes if using, and finish with chilli flakes and chives.

Recipe tips

  • Widening the hollow is the whole trick. Skip it and you will lose half the egg over the side.
  • Crack the egg into a cup first, slide in the yolk, then top up with white. Cracking directly into the avocado usually overflows.
  • Firm-ripe avocados hold their shape in the oven; very soft ones collapse into a puddle.
  • Check at 13 minutes. The gap between a soft yolk and a chalky one is about two minutes.

Does the avocado taste bitter after baking?

It can if it is overcooked or the fruit was very ripe. Keep to 15 minutes at 200°C and use firm-ripe fruit.
