    Simmer the quinoa in the water, covered, for 14 to 15 minutes until the grains uncoil, then rest off the heat for 5 minutes and fluff with a fork.

    Meanwhile boil the eggs for 7 minutes for a jammy yolk or 9 for firm, then cool in cold water and peel.

    Whisk the dressing ingredients together.

    Toss the warm quinoa with half the dressing and the spinach — the residual heat wilts the leaves just enough.

    Divide between two bowls, add the halved eggs, avocado slices and tomatoes, spoon over the rest of the dressing and scatter the seeds.

  • Rinse quinoa before cooking. The saponin coating on unrinsed grain tastes soapy.
