Easy Avocado Toast

Avocado toast gets dismissed as too simple to need a recipe, which is exactly why most of it is bland. The fix is not a longer ingredient list — it is enough salt, enough acid, and bread that is actually crisp.

This makes two slices from one medium avocado. Scale it by whole avocados; half an avocado on four slices is a scrape, not a topping.

    Halve the avocado, remove the stone, and scoop the flesh into a bowl.

    Add the lemon juice and salt, then mash with a fork. Stop while there are still visible lumps; a smooth purée loses the texture that makes this worth eating.

    Pile the avocado onto the toast and spread it to the edges, so no bite is only bread.

Recipe tips

  • A ripe avocado yields to gentle pressure at the stem end and the skin under the stem is green, not brown. Rock hard means three to five more days at room temperature.
  • Mash in the bowl, not on the toast. Mashing on the bread tears it and you end up under-seasoning.
  • No lemon? Use a teaspoon of white vinegar or amchur. The acid is doing real work here — it lifts the fat and slows browning.
  • Toast the bread on the dry side. If it is even slightly damp, the avocado slides off.
