Avocado Smoothie

Avocado in a smoothie is a texture ingredient. Use too much and you get something you eat with a spoon; the half-avocado-to-one-banana ratio here stays pourable.

It blends in about a minute in any jar blender, and it is sweet enough without added sugar if the banana is properly ripe.

    Put the milk into the blender first. Liquid at the bottom means the blades catch instead of spinning in air.

    Add the banana, avocado, vanilla and ice.

    Blend on high for 45 to 60 seconds, until completely smooth with no green flecks.

    Taste. Add honey only if it needs it, then blend for another 5 seconds.

    Pour and drink straight away — it thickens noticeably within ten minutes.

Recipe tips

  • Freeze the banana in chunks. It replaces most of the ice and gives a much thicker result without watering it down.
  • Green flecks mean it is under-blended, not that the avocado was wrong. Give it another 20 seconds.
  • Too thick? Add milk 30 ml at a time. Too thin? Another 20 g of avocado, not more banana.
  • A pinch of salt sharpens the flavour of any sweet smoothie, including this one.

Drink within about fifteen minutes. It will keep for a day covered in the fridge but thickens and darkens; stir in a splash of milk and a squeeze of lemon to revive it.

Does avocado make a smoothie taste grassy?

Not at this ratio, and not with a ripe fruit. An under-ripe avocado does taste grassy — wait until it yields to gentle pressure.

Can I make this dairy-free?

Yes. Oat milk keeps it creamy; almond milk makes it thinner and a little nuttier. Both work.

Can I prepare it the night before?

Freeze the fruit in a bag the night before and blend in the morning. A pre-blended smoothie separates and browns overnight.
