Avocado Banana Spinach Smoothie

Most green smoothies fail because they contain too much leaf. Two big handfuls of spinach in this quantity of liquid disappears completely behind the banana.

Baby spinach blends smoother than mature leaves, which leave fibrous threads however long you run the blender.

    Blend the spinach with the milk and lemon juice alone for 30 seconds first. This breaks the leaves down completely.

    Add the avocado, banana, chia and ice.

    Blend on high for another 45 seconds until uniformly green with no specks.

    Check the thickness and loosen with more milk if it is too dense to pour.

    Serve cold, straight away.

Recipe tips

  • Blending the leaves first, before the thick ingredients go in, is the trick to a smooth green drink.
  • The lemon juice keeps the green bright — without it the colour dulls towards olive within minutes.
  • Frozen spinach works and is cheaper; use 50 g and skip two of the ice cubes.
  • If it tastes flat, it needs acid or salt, not more sugar.

Can I taste the spinach?

At 60 g in this quantity of liquid, barely. If you go above about 100 g the flavour starts to come through.

Can I use kale instead?

Yes, but strip the stems and blend it longer. Kale is more fibrous and needs a stronger blender to disappear.

Why did my smoothie turn brown?

Oxidation from the avocado and the leaves. Lemon juice slows it, and drinking it fresh avoids it entirely.
