A smoothie bowl fails when the toppings sink. The fix is less liquid and more frozen fruit than you would use for a drink.

This mix is stiff enough that a spoon leaves a trail, which is what you want before anything goes on top.

    Put the milk and lemon juice into the blender, then the frozen fruit and avocado on top.

    Blend on low, stopping to push the mixture down with a spatula two or three times. Resist adding more liquid — that is what makes it runny.

    Once it moves as one thick mass, blend on high for 15 seconds to smooth it out. It should be too stiff to pour easily.

    Spoon into two bowls and level the surface.

    Add the toppings in lines rather than scattering, and eat straight away before it softens.

Recipe tips

  • A tamper or spatula is essential. Adding liquid to unstick the blades is what turns a bowl into a drink.
  • Chill the bowls in the freezer for five minutes first and it stays firm noticeably longer.
  • Frozen fruit is doing the structural work. Fresh fruit plus ice is not the same thing.
  • Add the granola last, right before eating, or it goes soft.

Why is my smoothie bowl runny?

Too much liquid, or fruit that was not frozen. Use frozen fruit and start with half the milk you think you need.

Do I need a high-powered blender?

It helps, but a standard jar blender copes if you cut the frozen fruit into small chunks and stop to scrape down often.

Can I make it less sweet?

Replace one banana with 100 g frozen courgette or cauliflower. It sounds odd and it works — both are neutral once frozen and blended.
