Most avocado sandwiches fail three hours later, in a lunchbox, when the tomato has soaked the bread. The order of assembly below fixes that.
It is a cold sandwich, no cooking at all, and it takes about eight minutes for two.

Lay the tomato slices on kitchen paper and sprinkle with a pinch of the salt. Leave for 5 minutes while you do everything else — this draws out the water that would otherwise end up in the bread.
Mash the avocado with the lemon juice, remaining salt and pepper.
Brush all four bread slices with the olive oil, or spread thinly with hung curd. This is the waterproof layer.
Spread the avocado thickly on two slices, then add lettuce, patted-dry tomato and cucumber in that order.
Top with the remaining slices, press gently, and cut in half. Wrap tightly in paper if it is going into a bag.
