Toss the avocado slices with the lemon juice and pepper and set aside.
Butter one side of each bread slice. Divide the cheese between two slices, on the unbuttered side, and top with the other two, buttered side out.
Heat a dry frying pan over medium-low. Cook the sandwiches for 3 to 4 minutes a side, pressing gently with a spatula, until deep golden and the cheese has melted.
Lift onto a board, open the top slice carefully, and lay the avocado inside along with the chilli flakes and spring onion if using.
Close, press once, cut diagonally and eat while the cheese is still stretchy.
