Avocado Chaat

Avocado is mild, fatty and slightly sweet, which is the same profile chaat has been built around for a century using potato and banana. It takes chaat masala remarkably well.

Everything can be chopped ahead. The sev goes on in the last ten seconds, or it turns to paste.

    Mix the onion, tomato, chilli and coriander in a bowl with the lemon juice and all the spices.

    Let that sit for 5 minutes so the onion softens slightly and takes up the masala.

    Cut the avocado and fold it in gently, keeping the cubes whole.

    Add the pomegranate seeds and fold once more.

    Scatter the sev over the top and serve immediately, while it is still crisp.

Recipe tips

  • Deseed the tomato. Its jelly waters down the masala and softens the sev faster.
  • Chaat masala already contains salt and amchur, so taste before adding more of either.
  • Pomegranate is doing a real job here — bursts of sweet acidity against the fat. Green grapes, halved, are a reasonable substitute.
  • If you are serving this at a table, bring the sev separately and let people add their own.

Does avocado work in chaat?

Yes. It fills the same role as boiled potato or ripe banana — a mild, soft, fatty base for the masala — and it needs no cooking.

What can I use instead of sev?

Crushed papdi, roasted chana, crushed khakhra or plain roasted peanuts. Anything that stays crunchy for a few minutes.

Can I make it less spicy?

Leave out the red chilli powder and deseed the green chilli. The chaat masala carries enough flavour on its own.
